About Us

Brooke Lignow, the founder of That Oyster Lounge, brings a wealth of business expertise to the table. Brooke began her career in 2006 within the aviation industry, dedicating five years to hospitality management and public relations for Qantas. Brooke went on to create her own business within the entertainment industry, and has developed a professional management style, which guarantees success and efficiency.

Our Oysters

Our oysters are sourced from the award-winning Fins Seafood, in Perth, who work closely with the best of the country’s oyster fishers and farmers, to locate the highest quality and freshest in season oysters.

Albany Rock Oysters

Albany Rock Oysters flourish in the cooler waters off the south coast of Western Australia, and their prime time for harvesting is during the summer and early autumn months. They thrive in the nutrient dense water of the Oyster Harbour, an inlet where the seawater from the Southern Ocean combines with the river waters from the King and Kalgan rivers. The Albany rock oyster has a beautifully distinct taste and texture, with hints of sea grasses and ocean succulents.

Sydney Rock Oysters

The delicious Sydney rock oyster, with its creamy, plump, and soft flesh, offers a clean finish. They’re bursting with a flavour that’s perfect on the palate, without being invasive. Just choose how you’d like them to be served and leave the rest up to our expert team of mobile rock oyster shuckers.

Tasmanian Oysters

Our oysters brought in fresh from Tasmania, are at their seasonal peak between April and September. Bursting with flavours of the ocean, they are intense, clean, and salty in favour, with a sophisticated creamy texture. They are renowned worldwide for their exceptional quality and when lightly dressed, deliver a supreme oyster culinary experience.

Coffin Bay Oysters

Our Coffin Bay oysters are sourced from South Australia, with the bay’s pristine waters providing the perfect environment for them to flourish, nurturing a crisp, fresh Southern Ocean flavour. They take one to two years to mature in the nutrient rich waters, and we provide only the premium graded, plumpest, freshly shucked for your special occasion.
